  • 4 chicken breasts (or boneless thighs, skin removed)

  • 2 tbsp Aleppo pepper

  • 2 tbsp pomegranate molasses

  • 2–3 tbsp extra-virgin olive oil (or half olive oil, half argan oil)

  • 2 garlic cloves, minced

  • 1/2 tsp ground cumin

  • 1/2 tsp paprika (optional)

  • Juice of 1/2 lemon

  • Pinch of sea salt

  • Pinch of sumac (optional, for garnish)


 

👨‍🍳 Directions

  1. Prepare the marinade:
    Mix Aleppo pepper, pomegranate molasses, garlic, cumin, lemon juice, salt, and olive oil in a bowl.
    Add the chicken and coat well.
    Marinate for at least 30 minutes (2–3 hours in the fridge is ideal).

  2. Cook the chicken:

    • Heat a grill pan or skillet over medium heat.

    • Cook the chicken for 5–7 minutes per side until golden and cooked through.

    • Sprinkle extra Aleppo pepper on top in the last minute of cooking.

  3. Serve with:

    • Cucumber yogurt salad with a dash of sumac

    • Steamed rice with a drizzle of olive oil and thyme

    • Or fresh salad and whole-grain bread
